In my opinion the best tasting fish in the world is panfish (crappie and sunfish). There are many great panfish recipes. Below is my favorte fish recipe. I like baking my fish which I believe is as good as tasting as fried fish without the extra calories. First filet the panfish removing the bones. Wash and and set the panfish filets on a paper towel. Pat dry the top side of the fish with a paper towel.

1) Take Shore Lunch in a box put on a plate. Take either egg beaters , egg whites , or whole eggs, and place in a bowl.
2) Dip the pan fish filet in the egg beaters or eggs. With a fork take the filet and set on the plate of shore lunch. Scoop with the fork shore lunch breading and place on top of the pan fish filet. Then take the fork and press lightly down on the breading pushing it into the fish. With the fork flip the filet over and repeat. Then take the fork and press lightly down on the breading pushing it into the fish. This will give the filet a good crispy coat on the filet.
3) Use a glass pan sprayed with cooking spray. Place the filets on the glass dis.
4) Pre-heat the oven to 400 degrees. Cook for 15 minutes Then turn the pan fish over and cook the other side for 10. minutes.
5) Take the glass pan out of the oven.
6) Important let the glass pan sit outside the oven for 10 minutes. This will allow the outer crust to harden and become very crunchy.
Serve with some lemon! Excellent , as good as it gets for cooked fish! Serve and enjoy. Good Eating!! A tip if you have extra fish to eat later. Be sure and use the oven to re-heat. Do not use the microwave. The microwave ruins the outer coating by making it soggy. Instead reheat in the oven. I put the filets in an un preheated oven for 15-20 minutes with the oven set at 400 degrees.
